Chicken enchiladas…(& margaritas) 🙂
This is literally one of the yummiest recipes EVER! Uncle Neil is a master of the sauce & it’s always my job to fill the tortillas with the yummy middles, cover with the sauce & pop in the oven. The half an hour they spend in the oven before you eat them is the longest half an hour… This is our ‘comfort’ dinner 🙂
There’s lots of chopping involved but soooooo worth the effort 🙂
Chop: 1 onion, as much garlic as you fancy, a couple of fresh chillies (take out the seeds unless you love extra heat), 6 fresh tomatoes, 1 red pepper, fresh coriander (as much as you like)
Pop the onions, garlic & a pinch of salt in a pan with some olive oil. Wait for the onions to soften then add the pepper & chillis, let those soften then add the tomatoes. Once the tomatoes have kinda collapsed add the coriander. Then the sauce can just carry on cooking until you’re reading to pour it over the enchiladas.
Mix: about half a big pot of natural yoghurt with some shredded cooked chicken (our favourite is cooked chicken thighs but you can add what ever you fancy, cooked seafood is just as yummy) & a good sprinkling of grated cheese (we used stilton tonight & it was a super yummy change)
Warm: a packet of tortillas (we love wholemeal but white are great too)
Spoon a good dollop of the filling into each of tortillas, roll up & lay in an oven dish. (it’s best to wipe with oil first to stop them sticking) Once they’re all laying together (you’ll end up with 6 or 8 depending on your tortillas) cover with the tomato sauce then with foil & pop in the oven for half an hour.
The great thing about this recipe is that the sauce can cook on the stove as long as you want it to & it can stay in the oven for ages & all that happens is the flavours get better & better. We’ve had plenty of evenings when we got carried away with….just one more cocktail….& the enchiladas have been all the yummier for it.
I recommend margaritas as preparation cocktails then lovely red wine for dinner time 🙂 (obvs when you’re old enough to drink 🙂 )
