Chicken enchiladas…for Tiny…love Teeto x

IMG_3245Chicken enchiladas…(& margaritas) ๐Ÿ™‚

This is literally one of the yummiest recipes EVER! Uncle Neil is a master of the sauce & it’s always my job to fill the tortillas with the yummy middles, cover with the sauce & pop in the oven. The half an hour they spend in the oven before you eat them is the longest half an hour… ย This is our ‘comfort’ dinner ๐Ÿ™‚

There’s lots of chopping involved but soooooo worth the effort ๐Ÿ™‚

Chop: ย 1 onion, as much garlic as you fancy, a couple of fresh chillies (take out the seeds unless you love extra heat), 6 fresh tomatoes, 1 red pepper, fresh coriander (as much as you like)

Pop the onions, garlic & a pinch of salt in a pan with some olive oil. ย Wait for the onions to soften then add the pepper & chillis, let those soften then add the tomatoes. ย Once the tomatoes have kinda collapsed add the coriander. ย Then the sauce can just carry on cooking until you’re reading to ย pour it over the enchiladas.

Mix: ย about half a big pot of natural yoghurt with some shredded cooked chicken (our favourite is cooked chicken thighs but you can add what ever you fancy, cooked seafood is just as yummy) & a good sprinkling of grated cheese (we used stilton tonight & it was a super yummy change)

Warm:ย a packet of tortillas (we love wholemeal but white are great too)

Spoon a good dollop of the filling into each of tortillas, roll up & lay in an oven dish. ย (it’s best to wipe with oil first to stop them sticking) ย Once they’re all laying together (you’ll end up with 6 or 8 depending on your tortillas) cover with the tomato sauce then with foil & pop in the oven for half an hour.

The great thing about this recipe is that the sauce can cook on the stove as long as you want it to & it can stay in the oven for ages & all that happens is the flavours get better & better. ย We’ve had plenty of evenings when we got carried away with….just one more cocktail….& the enchiladas have been all the yummier for it.

I recommend margaritas as preparation cocktails then lovely red wine for dinner time ๐Ÿ™‚ ย (obvs when you’re old enough to drink ๐Ÿ™‚ )
